My Top 10 Gluten-free Cookie/ Biscuit Recipes
I began baking gluten-free when I lived in Melbourne over 15 years ago. At the time I was having digestive issues and couldn't tolerate wheat. The package stored bought gluten-free biscuits was not that great. So I started baking my own. I discovered there were many great recipes from Italy, Greek and other cultures that were already made without using wheat flour.
Since 2019 when I started my YouTube channel Sue Maree P I also started this blog/ website to store my recipes. Over the last four years, gluten-free recipes are popular with many of my followers. I have created a number of recipes inspired by many different cultures or traditional recipes.
In this article, I thought I would list my top 10 gluten-free cookies or biscuits recipes. What I love about cookies, is they are quick to bake, easy to transport and share and they stay fresh longer than cakes or bread. I think there's still room to create some new recipes.
No. 1: Rice Flour cookies: only 3 ingredients
One bite of my rice flour cookies and they melt in your mouth. I wanted to make a simple three-ingredient cookie using brown rice flour. I included tahini to bind the cookies instead of an egg and adding maple syrup means the taste is not too sweet. The rice flour cookies are soft yet crunchy and a perfect recipe for anyone after a cookie recipe without eggs and dairy.
No. 2: Sunflower Seed Cookies
I love eating sunflower seeds and thought they would be great in a cookie recipe. I created this gluten-free sunflower seed cookie with a little coconut. These are delicious. Soft, chewy and when first baked a little crunch.
No. 3: Greek Almond Cresent Cookies
Greek almond crescent cookies are very similar to the almond cookies above. Only the shape, the addition of almond extract and rolled-in flaked almonds on the outside. The gluten-free almond crescent cookies are quick to make; you don't even need an electric mixer. Simple ingredients egg whites, sugar, ground almonds, flaked almonds and almond extract. No. 4: Easy Almond Cookies
I love the flavour of this Italian-style easy almond cookie recipe. Only 3 ingredients ground almonds, egg whites and sugar. A quick gluten-free recipe to make when you are in a hurry. Recently I read online that a Sicilian version is to add in lemon zest. Recently I made a batch to share with friends and I added the zest from half a lemon and they were even better.
No. 5: Gluten-free Walnut Cookies: only 3 ingredients
This gluten-free walnut cookie recipe was inspired by the Italian almond cookie recipe but instead of ground almonds I used walnuts. I kept some pieces crushed and not ground for extra crunch and interest.
No. 6: Easy Sunflower Seed Cookies
Don't laugh but I also made my favourite 3 ingredient cookie recipe using ground sunflower seeds and guess what it has also been popular. They taste really good. Also quick and easy to whip up.
No. 7: Flaxseed Almond Sesame Seed Cookies: no eggs, no dairy & gluten-free
Sue Maree P created the recipe. Gluten-free Flaxseed, Almond and Sesame seed cookies. Made with 5 ingredients; ground flaxseed, ground almonds, a liquid sweetener like maple syrup or honey, tahini paste and rolled in sesame seeds. Crunchy semi-healthy and easy to make.
No. 8: Peanut Butter Cookies: Gluten-free with brown rice flour
Peanut butter cookies, are a super simple cookie to whip up and a great cookie if you love peanut butter with a hint of chocolate.
No. 9: Coconut Macaroons: Gluten-free, no-condensed milk
Coconut macaroons with a hint of cardamom and no condensed milk. This a great cookie recipe to use up any leftover egg whites. These coconut macaroons are not too sweet, crunchy on the outside, and soft in the centre, with a hint of cardamom and an extra special dark chocolate bottom. With only six simple ingredients, quick and easy to bake and look super stunning to serve for dessert or an afternoon tea.
No. 10: Easy Pumpkin Seed Cookies: 3 ingredients
Another variation on the 3 ingredient almond cookies, but with delicious pumpkin seeds. Soft in the centre and crunchy on the outside. They might sound strange but taste delicious.
