Yes, it is Autumn here already. Where is the year going? We have had an extremely very warm week which is strange for Gothenburg. We have enjoyed 26 and even 30 degrees one week then a cold snap down to 10 degrees overnight.

Who Loves Homemade Buns?

I have been making buns this week because my hubby loves homemade burgers. So I thought I would re-share some of my all-time favourite bun recipes to try this month. From soft baguettes to Japanese soft buns. Perfect for breakfast, lunch, burgers or a dinner roll. there is no need to eat tasteless supermarket buns or buy expensive bakery buns.

How to Make Spelt Hot Dog Buns
In this video I share my recipe for how to make spelt hot dog buns. My buns are soft, baked with a combination of white spelt flour and a little whole grain flour or feel free to use regular white bread flour.
Soft Spelt Baguettes in just 2 hours
My recipe for spelt flour baguettes is ready to eat in just 2 hours. The outside has a soft crunch that’s easy to eat. This is my preferred style of baguette. This is made with white spelt flour, no eggs and no milk, quick dry yeast, warm water, a little salt sugar and olive oil.
Soft Spelt Seed Buns: no dairy
Spelt seed buns are dense chewy and jam-packed and full of nutritious seeds. Made with a combination of wholegrain spelt flour and a little white, or swap out for all wholegrain.
Spelt Japanese Bread Rolls with Oat milk
The secret is in the first step to having the fluffy bread is making an Asian-style bread starter or water roux which is called a tangzhou (pronounced tan-jong) or yu-dane.

What I am working on...

I have made a batch of homemade kimchi (without fish sauce) and will share a recipe very soon. I have been experimenting with overnight spelt sourdough mini loaves and spelt raisin scones!
