After commencing my sourdough starter a few months ago, I have now been making delicious spelt pizzas at home using my spelt flour sourdough starter. The spelt sourdough pizzas taste better than any local pizza place here. The sourdough flavour is better and the pizza texture is light and fluffy.

What is Sorghum Flour?

Yes, it is an excellent substitute for wheat flour. But do not substitute recipes 1:1 you will need to blend it with another flour for structure. It is perfect for anyone that can't tolerate wheat flour and those avoiding wheat due to celiac disease.

My recipe for soft spelt banana bread is not banana bread that is like a cake. This spelt bread is super soft and fluffy bread perfect for sandwiches or toasting. Using fresh bananas for added sweetness and moisture.

Spelt Hot Cross Buns with Dates Raisins and Orange: no eggs, no dairy

Made with white spelt flour (you could add some wholegrain if preferred), fast-dried yeast, plant-based milk, dates, fresh orange juice and zest, spices and a little oil. They will last in a container for up to three days. Be warned they will not last that long.

I discovered black rice recently and have enjoyed creating this black rice blueberry pudding, I have also made this using blackberries. I use frozen berries because it's not berry season here in Sweden. Precooking the black rice before making this is the best way to whip it up.

Italian Walnut Cake: gluten-free, torta di noci

This is a traditional Calabrian Italian walnut cake recipe; called torta di noci. This is a gluten-free flourless cake made with only 3 ingredients. Walnuts, sugar and eggs and a little optional lemon or orange zest if you'd like.
