New Years Italian 3 Course Menu

Happy New Year from Sue Maree P. I have created a New Year's Italian 3-course menu for 2 or double for 4 or more. A healthy starter of roasted tomatoes with fresh mozzarella on my spelt olive and rosemary bread. Followed lucky Lentil stew with vegan gluten-free sausages. Then to finish this New Year's Eve Italian Menu; a super moist and easy 5 ingredients torte Caprese (flourless chocolate cake) known as Torte Caprese, a delicious cake served with vanilla ice cream. Most of these menu ideas can be prepared in advance so you can enjoy the evening with your guests.

Starter: Roasted Tomatoes with Mozzarella on Spelt Olive and Rosemary Bread

Main: Lentil Stew and Sausages (traditionally Pork)

Lentils are a must in Italy for many Italians on New Year's dinner. Their coin-like shape is believed to bring prosperity for the new year. The lentils are traditionally served with Cotechino (Italian pork sausages) or Zampone (stuffed pig's trotter). However, I don't eat either so I will serve my Italian-style lentils with vegetarian sausages.

Italian Lentil Stew with Gluten-free Vegan Sausages

  • Chopped Onion
  • Crushed Garlic clove
  • Tinned tomatoes – 400g
  • Drained Tinned lentils – 400g
  • Basil – 1/2 teaspoon
  • Thyme – 1/2 teaspoon
  • Chilli flakes – 1/4 teaspoon
  • Vegetable stock – 200ml
  • Baby spinach

Dessert: Torte Caprese (Italian Flourless Chocolate Cake)
