How to Make Spelt pancakes without eggs 5 ways/recipes

I was curious about How to Make Fluffy Spelt Flour Pancakes without eggs. I challenge myself to try as many ways as possible. I experimented with five ways to make spelt pancakes at home without eggs. The first experiment was to use a flax egg, then soda water (or sparkling water), a third way of using apple cider vinegar and the last two with fruit, apple puree and or mashed banana.

If you're like me and wake up craving pancakes only to discover you are fresh out of eggs or following a diet and not eating eggs, then here are a few options to try.

Flax Egg (flax seed) Spelt Pancakes no eggs

Using flax egg is a favourite option for having spelt pancakes without eggs. Add one tablespoon of ground flaxseed with three tablespoons of water and rest for at least 15 minutes to create this magical gel-like pretend egg. Flaxseed is a fantastic way to add extra fibre and nutrients to your diet. The pancake texture is still fluffy and light. This recipe is worth a try.

Ingredients

  • Wholemeal or White Spelt Flour – 150g (1 cup)
  • Baking Powder – 1/2 tsp
  • Baking Soda – 1/2 tsp*
  • Flax egg  – 1 (1 tbsp of ground flax seed + 3 tbsp water + 15 mins chill time = flax egg = 1 egg
  • Oat Milk – 1/2 cup to 3/4 depending on your preferred thickness
  • Ground Cinnamon – 1/2 tsp
  • Pinch of salt if desired

Soda Water Spelt Pancakes no eggs

Soda water or sparkling water pancakes might be my favourite recipe for pancakes without eggs. The texture was fluffy and light. I loved this version. So simple. Just add water with bubbles, and then you get fluffy light pancakes without needing any eggs.

Ingredients

  • Wholemeal or White Spelt Flour – 150g (1 cup)
  • Baking Powder – 1/2 tsp
  • Baking Soda – 1/2 tsp*
  • Soda water or sparkling water – 1/4 cup
  • Oat Milk – 1/2 cup to 3/4 depending on your preferred thickness
  • Ground Cinnamon – 1/2 tsp
  • Pinch of salt if desired

Apple Cider Vinegar Spelt Pancakes no eggs

Surprisedly delicious. I was dubious whether adding vinegar to my spelt pancake batter would still taste good. I made my spelt pancakes recipe with apple cider vinegar first without the vanilla and cinnamon. After tasting the pancakes,  I  decided that I needed to add extra flavouring.
The texture is super fluffy without noticing the flavour of the vinegar. Please give this recipe a go.

  • Baking Soda – 1/2 tsp*
  • Apple Cider Vinegar, white vinegar or lemon juice  – 1 tbsp* (rest in the milk for at least 5 minutes)
  • Oat Milk – 1/2 cup to 3/4 depending on your preferred thickness
  • Ground Cinnamon – 1/2 tsp
  • Pinch of salt if desired

Apple Puree Spelt Pancakes no eggs

The first time I made my recipe for spelt pancakes with apple puree instead of adding egg, I was not impressed. The texture was slightly gummy. However, the next time I attempted to make my pancake recipe with apple puree cooked each pancake longer and guess what. Fluffy and light, the gumminess was less noticeable. I would recommend this recipe if you have a jar of apple puree.

Ingredients

  • Wholemeal or White Spelt Flour – 150g (1 cup)
  • Baking Powder – 1/2 tsp
  • Baking Soda – 1/2 tsp*
  • Apple Cider Vinegar, white vinegar or lemon juice  – 1 tbsp

  • Ground Cinnamon (optional) – 1/2 tsp
  • Pinch of salt if desired

Banana Spelt Pancakes no eggs

My friend Charlie makes her egg-free pancakes this way. I was having a chat with Charlie and was not convinced that I would like mashed banana inside my fluffy pancakes. I had this before and didn't like biting into a piece of mashed banana inside the pancake. When I filmed this option for my YouTube video, I mashed my banana thoroughly to make sure there were no large banana chunks. The result was surprising. So fluffy. There was still a hint of banana flavour without the banana texture. I now need to backpedal and let Charlie know that she was right. This recipe is a great way to have a pancake recipe without eggs.

Ingredients

  • Wholemeal or White Spelt Flour – 150g (1 cup)
  • Baking Powder – 1/2 tsp
  • Baking Soda – 1/2 tsp*
  • Mashed banana (1 small to medium banana works) – 1/4 cup
  • Oat Milk – 1/2 cup to 3/4 depending on your preferred thickness
  • Ground Cinnamon (optional) – 1/2 tsp
  • Pinch of salt optional – I rarely add

Method

  1. HEAT – non-stick pan, brush lightly with oil or melted butter, smooth off with a paper towel.
  2. If using the flax egg method prepare this 15 minutes before needing it. Add 1 tablespoon of ground flaxseed with 3 tablespoons of water and rest in the fridge. This can be made the night before.
  3. WHISK – flour, baking soda, baking powder and spice (if adding) in a medium bowl.
  4. MIX in the milk is only half the amount to start. Then add whatever egg replacement method you are making. Then beat gently until smooth.
  5. TRANSFER mixture to a pouring jug (if you had one) or use a 1/4 cup and scoop out the batter to your preferred size.
  6. COOK – one side 2-3 mins, once bubbles appear, then flip. Should be golden brown, turn the pan down if cooking too fast
  7. FLIP – cook the second side for approx, 1 min, this side will be faster.
  8. SERVE – with jam, fruit, chocolate spread or maple syrup

* If you don't have baking soda add 1 tsp of baking powder. I've made them both ways but this is my preferred recipe. Add salt if you prefer however, I don't need extra salt in my diet so I leave it out. Happy cooking!
