How to Make Spelt Pancakes with water (No Milk)

Spelt Pancakes with Water (No Milk) are light, fluffy, and simple to make with just a few pantry ingredients. Perfect for anyone avoiding dairy or simply seeking a quick breakfast option, this recipe utilises water instead of milk, yet still delivers soft and tasty pancakes.
Spelt flour adds a subtle nutty flavour and is often easier to digest than regular wheat, making these pancakes a wholesome choice for both everyday breakfasts and weekend brunch. Enjoy them with fresh fruit, a drizzle of maple syrup, or your favourite toppings.
This recipe could also be made with gluten-free flour, buckwheat flour or your favourite flour. To make this vegan, add in one flaxseed egg or chia seed egg.
Takes = 10 minutes prep.
Makes = 8-10 small pancakes
Ingredients
- Spelt flour, white or whole – 150g (1 cup)
- Baking powder – 1 ts
- Baking soda – 1 ts
- Tap Water or sparkling water – 1.5 to 2 cups
- Egg – 1 (or swap for vegan version 1 tb of chia or flax seeds + 3 tb water)
- Cinnamon (optional) – 1 ts
- Vanilla extract or vanilla sugar (optional) – 1 ts
- Salt (optional) – 1/4 ts (I never add this)
Method
- Whisk flour, baking powder, baking soda, cinnamon and vanilla sugar.
- Add in egg and liquid and mix until smooth.
- Scoop out 1/4 cup or 1/3 cup of batter into a warm non-stick oil pan. Cook the first side until bubbles appear, then flip it over. Repeat until all the batter is used.
