Easy Spelt Flour Pantry Brownies: 25 minutes
I wanted to make an easy brownie with ingredients readily available in your pantry. These spelt brownies are moist and light and have only 6 ingredients: butter, eggs, sugar, cocoa powder and vanilla. It has only 5 easy steps and takes about 10 minutes to whip up and 25 minutes to bake. You could even bake them a less time for a more gooey brownie. This recipe was inspired by the famous Australian baker and celebrity Donna Hay's recipe.
I also made this recipe with my gluten-free flour blend, which was a success.

Makes = 16-20 small squares
6 Ingredients
- Butter – 150g (1/2 cup + 2tbs)
- Sugar – 200g (1 cup)
- Cocoa powder – 75g (3/4 cup)
- Eggs – 3
- Vanilla extract – 1 teaspoon
- Spelt Flour, or regular or gluten-free – 80g (1/2 cup)
Method 5 Easy Steps
- Preheat oven to 180˚C or 160°C fan. Grease and paper line a square cake tin.
- Melt butter with sugar and cocoa together over low heat or in a microwave (I did the latter in a glass jug for 2 x 45 seconds 600w).
- Mix in vanilla and eggs, whisking well with hand-held electric beaters. Then sift over the flour and stir well.
- Spoon into the prepared tin and bake for 25 minutes until just set.
- Cool in the tin. Cut into squares to serve.
