Easy Italian Piadina: just flour, water, salt

My Homemade Spelt Piadina – Dairy-Free & Soft!
This piadina recipe is inspired by my lovely Italian friend Gepinna. In the video, I’ve added my own tweak using white spelt flour for a gentler-on-the-digestion, nutty-flavoured flatbread. Gepinna shared a brilliant tip for making soft, dairy-free piadine: use sparkling water—or aqua frizzante, as it’s known in Italy. It creates a light, tender texture without needing milk or yoghurt. Perfect for wrapping your favourite savoury fillings or enjoying warm straight out of the pan!
Ingredients 6 pieces
- Flour – 2 cups all-purpose flour
- Pinch of salt
- Sparkling water – 1 cup water
- Olive oil, pan, and to make them brown
Method
- Whisk flour and salt. Then add in sparkling water. Rest 10 minutes.
- Divide the dough into 6 pieces (about 87g each) and roll each piece into a ball. Cover the dough balls loosely with plastic wrap and let them rest for 20 minutes.
- Preheat the fry pan.
- Roll out one ball at a time very thin on a flour surface.
- Add a little oil to your fry pan.
- Cook each side until bubbling and golden brown. Flip over and cook the other side.
