The buckwheat flour lends them a slightly nutty flavour and enhances their nutritional value, making them a great alternative to traditional waffles.
Unlike regular waffles made with refined flours, these waffles are packed with whole-grain goodness and provide a more complex flavour and texture. Dry Ingredients
- Buckwheat flour – 150 to 170g (about 1 cup)
- Baking powder – 1/2 ts
- Baking soda – 1/2 ts
- Salt – 1/8 ts
- Cinnamon – 1 ts
Wet Ingredients
- Vanilla extract – 1/2 ts
- Maple, or date syrup – 1 tablespoon
- Plant-milk (like almond, oat, coconut or your choice) – 290g (1.5 cups)
- Apple cider vinegar or lemon juice – 2 ts
- Melted coconut oil or neutral oil – 1 tbsp
Method
- Preheat your waffle maker. Combine the milk and apple cider vinegar, then rest it for 5-10 minutes to create a “buttermilk” effect. (I used oat milk, and it didn't get thick but still tasted great).
- Then add the syrup, vanilla extract, and melted coconut oil to the milk mixture.
- Whisk all dry ingredients together: buckwheat flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for about 5 minutes to thicken.
- Lightly grease your waffle iron (if needed) and pour in the batter. Cook according to the waffle maker’s instructions until crispy and golden brown. Mine take a few minutes on either side.
- Serve warm with your favourite toppings eg. fresh berries, yoghurt, nut butter, or a drizzle of maple syrup.

- For extra crispiness, let the waffles cook a little longer and then rest on a wire rack instead of stacking them.
- These waffles freeze beautifully! Just reheat in a toaster or oven for a quick breakfast.
