Hello from Sweden. I have just come back from a much-needed sunshine break. I spent a week swimming and playing tennis in Tenerife with my husband.

Anzac Day
Tomorrow 25th April is Anzac Day and I am sharing two recipes below for Anzac biscuits. One is my original recipe but with spelt flour and a brand-new gluten-free recipe.
What is Anzac Day? Anzac Day, 25 April, is one of Australia’s most important national occasions. It marks the anniversary of the first major military action fought by Australian and New Zealand forces during the First World War. ANZAC stands for Australian and New Zealand Army Corps. The soldiers in those forces quickly became known as Anzacs, and the pride they took in that name endures to this day.
Many people in both Australia and New Zealand bake Anzac biscuits to celebrate and remember this day.
What are Anzac biscuits?
Anzac biscuits are a sweet biscuit, popular in Australia and New Zealand made using simple ingredients – rolled oats, flour, sugar, butter (or margarine), golden syrup, baking soda, boiling water (originally) then coconut was added later on. I have tweaked the recipe and made it with spelt flour. I like to bake my biscuits so they are crispy on the outside and soft in the middle after only 10 minutes. If you prefer a crunchy biscuit cook for another 5 minutes.

My new Gluten-free Anzac Biscuit Recipe (member-only)
My new gluten-free Anzac biscuit is simply made with gluten-free oats ground into flour and gluten-free oats. This recipe has a little more water and sweetener than my original spelt recipe with golden syrup. Here in Sweden, we can't buy golden syrup and I found the dark syrup I used wasn't as strong so I a little added more. If you're able to buy golden syrup you can adjust back to only 3 tablespoons.
