Easy Wholegrain Spelt Date Scones: no dairy, vegan recipe

Spelt flour date scones without dairy are a variation of last year's original 4 ingredient scone dairy-free recipe. This time to make them fruit scones I have added dates (raisins work well also) and a little cinnamon spice. To make them easier when baking I don't use rings I just cut them before baking in triangles.

My easy Wholegrain Spelt Dates Scones vegan recipe is made using only a few ingredients. Wholemeal Spelt flour, baking powder, sugar, coconut milk, salt, dates and cinnamon. This spelt scones recipe is dairy-free and egg-free. I love the simplicity of this recipe. Also, it is a little healthy without butter. The texture of my wholemeal spelt scones is light and with a gentle crumb as all good scones should have. Or so I am told!

This recipe is delicious and super easy. There's no blending of the butter into the flour!

Takes = 10 minutes
Bakes = 12-15 minutes
Makes = 6-8 scones

Ingredients

  • Wholegrain Spelt Flour – 220g (1.5 cups)
  • Baking powder – 14g (2 level tablespoons only)
  • Cinnamon – 1 ts (optional)
  • Salt – 1/2 ts
  • Sugar – 1 tb (optional)
  • Coconut milk – 150ml (1/2 cup plus extra for brushing)
  • Soft dates, no seed and sliced in half – 80g (10 dates)

Method

  1. Preheat oven to 220˚C/200˚C fan and preheat a lined baking tray on an upper shelf. This tip makes the scones even better! If using dates, slice them in half and remove the seeds.
  2. Whisk the flour, cinnamon, salt, sugar and baking powder into a medium bowl. Then pour in coconut milk and dates, and gently mix until combined.
  3. Place the dough onto baking paper and gently knead to remove any cracks then form a round shape, then cut through to make 6-8 triangles. Brush the tops with a little coconut milk. Slide onto the preheated baking sheet/tray.
  4. Bake in a preheated oven on an upper shelf position for 12-15 mins approx. until golden brown. TIP: Having a slightly higher temperature gives the spelt scones a lift.
  5. Cool the tray for 10 minutes. Serve with your favourite scone toppings.
