Ingredients

  • Red lentils, rinsed – 300g 1.5 cups
  • Olive oil – 2 tbs
  • Onion, chopped – 1 large
  • Minced garlic – 3 cloves or 2 ts
  • Vegetable stock cube, or your choice – 1
  • Boiling water – 1 litre (more for a thinner soup)
  • Carrots, peeled and chopped – 1 to 2 cups (5-6 medium carrots)
  • Dried thyme – 1/2 ts
  • Cumin powder – 1 ts
  • Chilli flakes – 1/4 ts to taste
  • Diced or crushed tomatoes – 1 can
  • Passata – 1/2 cup
  • Tomato paste (optional) – 1 to 2 tbs
  • Lemon zest and juice – optional

Method

  1. Sauté the onions and garlic for a few minutes, add the diced carrots and cook for a few minutes.
  2. Add all the dried spices and cook for 1-2 minutes. Then add tomatoes, stock and lentils.
  3. Bring to a boil then simmer for 25 mins until all the vegetables are tender and the soup is thick. You could puree slightly with a bamix-like want.
  4. Before serving add in the greens, a zest of lemon and lemon juice. Serves 6 with a salad or bread.

  • Store the soup in the refrigerator for up to 5 days.
  • Store in the freezer for 2-3 months.
  • Serve with fresh lemon and or fresh herbs and yoghurt.
  • Add in any greens you like but about 5 minutes before serving.
  • For a thinner soup, add more water or vegetable stock.
