Kitchen Love: September 2023

This month my new journey as a student has begun. I am excited to share that I was accepted into a part-time course at Gothenburg University. It's like this course was created for me. The course name is EAT: food culture, materiality and design. They said in the uni blurb: ...this course is for those who are interested in the connection between design and eating. I read this and thought. I am interested in both design and eating. It's a fantastic opportunity to connect and collaborate with others in my new city. If you're wondering, yes the course is in English. Phew!

As well as the university course, I am learning Swedish through a government course called SFI; Swedish for Immigrants. Luckily the course is during the day located only a short walk from where we live. Over the past year, I have had 50 one-hour Zoom lessons but I would love to be able to speak more fluently. Many people can speak English here so you could get by but I would love to be able to converse in the local language. Maybe if I get confident I will share a video in Swedish.

Don't worry I am not giving up my YouTubing. Yes, I am still baking and cooking in my spare time. My aim is to release a new video each week.

Cookies and Small Treats to bake when you don't have eggs

I recently compiled a list of existing recipes for small treats like cookies/biscuits or balls that are made without eggs. I thought; you might feel like whipping up a treat and realise you have no eggs in the kitchen or you forgot to buy them. Or you have a family member who doesn't like eating eggs for personal taste or is allergic to eggs.

Spiced Oat Breakfast Cookies
This spiced breakfast cookie recipe was dreamt up when I wanted to bake cookies to take camping. I merged a few recipes together and this is my creation. These breakfast cookies are soft yet chewy and remind me of ANZAC biscuits but with delicious spice, fruit and nuts.
Easy Melting Moments
Melting moments are an Aussie classic shortbread biscuit that melts in your mouth. Melting moments are made with 6 simple ingredients; butter, flour, cornflour, icing sugar, vanilla and lemon. My recipe is with non-dairy butter, so I could share this sweet treat with vegan friends.
Rice Flour cookies without eggs 3 ingredients
One bite of my rice flour cookies and they melt in your mouth. I wanted to makea simple three-ingredient cookie using brown rice flour. I included tahini tobind the cookies instead of an egg and adding maple syrup means the taste is nottoo sweet. The rice flour
