How to Make Pikelets with Spelt Flour
I have a request for how to make pikelets with spelt flour and I have added oat milk. Feel free to add your preferred flour and milk. The difference between pikelets and pancakes is the size. Pikelets are mini pancakes and are often served cold as well as warm. There's less milk than pancakes and a little more baking agents to make them fluffy. Pikelets are delicious served with butter, jam and cream if you like.
Pikelets always remind me of my father cooking in our kitchen. His joke was he could never make them quick enough as we all wanted to eat them straight from the frying pan.
Takes = 5 minutes to prep. + cooking time
Makes = 12 small
Ingredients
- Spelt flour (or your choice)* – 1 cup
- Baking soda – 1.5 teaspoons
- Baking powder – 1/2 teaspoon
- Milk (I often use oat milk or plant-based milk) – 3/4 cup
- Egg – 1
Method
Step 1
WHISK flour and baking soda and powder together. Add in a pinch of salt if preferred.
Step 2
BEAT in milk and egg and combine until smooth.
Step 3
HEAT your fry pan use a small amount of oil to grease your pan if it's not non-stick. Pour in about 1 tablespoon of batter and make a small circle cook for a few minutes until bubbles appear, then flip and cook for a few minutes on the other side. Cook all batter until finished. You may only be able to cook 3 to 4 at a time depending on the size of your fry pan.

- Self-raising flour – this could be used but leave out the baking powder and baking soda.
- Milk – you could add in any type of milk whole or plant-based. I often make pancakes when I need to use up old milk. Something I learnt from my parents.
