Fluffy Spelt Sourdough Pancakes: no eggs or dairy

Here is a new idea for fluffy spelt sourdough pancakes without eggs or dairy. In my video tutorial, I will show you how to make fluffy and light, spelt sourdough pancakes without using any eggs or dairy. For a light fluffy spelt pancake then try this recipe. I always add a hint of cinnamon as I think everything tastes better with cinnamon but if you're not a fan of cinnamon leave it out.

If you don't have a problem eating eggs then feel free to swap out the egg replacement and add in an egg. My formula for how to make a flax or chia egg is written below. If you love the sour taste of sourdough bread then you'll also love these pancakes.

Makes = 8 medium or 12 small
Takes = 5 minutes preparation

Ingredients

  • Feed starter – 1 cup
  • Spelt flour white or wholemeal – 70-80g (about 1/2 cup)
  • Soy milk or your choice – 1/2 to 3/4 cup (depending on how thick you like them)
  • One Egg or egg replacement – *flax egg or chia seeds
  • Baking powder – 1/2 ts
  • Baking soda (bicarb soda) – 1/2 ts
  • Salt (optional) – 1/8 ts*
  • Ground Cinnamon (optional) – 1 tsp
  • Olive oil or coconut oil (optional) – 1 tbsp

Method

  1. Add 1 cup of active starter to your medium bowl, then add all ingredients and combine until the batter is smooth. If the batter is too thick add more milk.
  2. Preheat your non-stick fry pan to a medium heat. Then pour 1/4-1/3 cup full of batter into the pan cook for a few minutes on one side then flip and cook for about 1 minute on the second side. Remove and place on a plate. A tip: to keep them warm and soft as I am cooking them I cover the plate with a tea towel. This recipe I like to make them small so we can enjoy them later on like piklets for afternoon tea or fika!

  • Egg replacement: to make a flax or chia egg: add 1 tablespoon of ground flax seeds or chia seeds to 3 tablespoon of water, stir then rest for at least 15 minutes until it looks gel-like. I usually make this overnight.
  • Adding in oil or melted butter will give them a more golden brown finish
