Easy Spelt Flour Pantry Brownies: 25 minutes

I wanted to make an easy brownie with ingredients readily available in your pantry. These spelt brownies are moist and light and have only 6 ingredients: butter, eggs, sugar, cocoa powder and vanilla. It has only 5 easy steps and takes about 10 minutes to whip up and 25 minutes to bake. You could even bake them a less time for a more gooey brownie. This recipe was inspired by the famous Australian baker and celebrity Donna Hay's recipe.

I also made this recipe with my gluten-free flour blend, which was a success.

Takes = 10 minutes
Bakes = 25 minutes
Makes = 16-20 small squares

6 Ingredients

  • Butter – 150g (1/2 cup + 2tbs)
  • Sugar – 200g (1 cup)
  • Cocoa powder – 75g (3/4 cup)
  • Eggs – 3
  • Vanilla extract – 1 teaspoon
  • Spelt Flour, or regular or gluten-free – 80g (1/2 cup)

Method 5 Easy Steps

  1. Preheat oven to 180˚C or 160°C fan. Grease and paper line a square cake tin.  
  2. Melt butter with sugar and cocoa together over low heat or in a microwave (I did the latter in a glass jug for 2 x 45 seconds 600w).
  3. Mix in vanilla and eggs, whisking well with hand-held electric beaters.  Then sift over the flour and stir well.
  4. Spoon into the prepared tin and bake for 25 minutes until just set.
  5. Cool in the tin. Cut into squares to serve.
