Bouncy Banana Energy Balls

My Bouncy Banana energy balls are a simple healthy snack to make have a little bounce in your day. All you need is one ripe banana, rolled or porridge oats, dates, coconut and I add a few extras like chia seeds and ground flax seeds for additional goodness. I prefer to use my food processor or a blender to whip up the banana energy balls. No food processor or blender, then here are a few tips. Firstly mash the banana with a fork or potato masher. Soak the chopped dates in a little hot water then drain off the water. This banana energy balls recipe is for about 18 smallish balls. Double my recipe to make a large quantity. These energy balls are best stored in the fridge for about 7 days in a sealed container or freeze them for 2-3 months.

Takes = 10 minutes + chill time 2 hours or overnight is even better.
Makes = 18 small balls (teaspoon) or 10 medium balls (tablespoon)

Ingredients

  • Mashed banana – 1 large
  • Rolled Oats – 1/2 cup
  • Pitted Dates Chopped – about 6  (1/2 cup)
  • Desiccated coconut – 1/2 cup
  • Optional chia seeds – 1 level tablespoon
  • Optional ground flax seeds – 1 level tablespoon

Method

Step 1
WHIZ all ingredients in a blender or food processor

Step 2
SCOOP a teaspoon of mixture and roll into a ball, then roll into coconut. Place in a sealed container in the fridge for up to 7 days or in the freezer for 2 to 3 months.
