3 ingredient spelt flatbread; no yeast, no oven

My 3 ingredient spelt flatbread no yeast, no oven recipe was inspired by the recipe creator Gemma from Bigger Bolder Baking. This 3 ingredient flatbread recipe uses flour, baking powder and natural yoghurt and no yeast. I have been practising making my version with spelt flour, you can add all white flour or add some wholegrain flour.
The spelt flatbread texture is soft and fluffy and you can cook this in a frypan. I make this flatbread recipe without my stand mixer, and all you need is a large bowl, a spoon and your hands.

I must admit Spelt flour is trickier to get a perfect round flatbread, but don't be discouraged even if the shape looks slightly odd they still taste great. I make these for a quick pizza base and perfect for anyone avoiding yeast in their diets.

Takes = 10 minutes prep. + cooking time about 20 minutes
Makes = 6 flatbreads

3 Ingredients

  • White spelt flour (or your choice) – 1 cup + dusting
  • Baking powder – 2 teaspoons
  • Greek or Natural Yoghurt – 1/2 cup (or more depending on the flour)
  • Oil for cooking

Method

Step 1
WHISK flour and baking powder together in a medium to a large bowl.

Step 2
ADD in yoghurt and mix until combined then bring it together using your hand. Rest with the bowl on top for 5 to 10 minutes.

Step 3
DIVIDE into 6 pieces, then roll into a ball with your hands. Add flour to your bench or breadboard, then use a rolling pin to flatten as thin as possible, either a round shape or oval or a creative shape. Brush with a little oil (it does work without too but less bubbly) and cook for a few minutes until bubbly then flip over. Place on a plate covered with a cloth to keep soft.
